Real fruit icy poles

Serves 6

INGREDIENTS:

icy pole moulds                 6

99% fruit juice of your choice      2 cups

Any summer fruit you like!          about 1 cup

Strawberries, mango,

blueberries, cherries,

kiwi fruit, pineapple,

watermelon etc                                


METHOD:           

Cut fruit into chunks and place in the moulds, filling about half way. Pour in fruit juice to the top of the mould. Freeze overnight. When ready to serve, run some warm water over the mould and gently slide icy pole out.

Rainbow Veggie Wraps

A great way to boost kids veggie intake and a fun alternative to sandwiches.

 Ingredients

4 wholemeal wraps or pita bread

1 avocado

425g can tuna in spring water, drained

1 medium carrot, grated

1 cup lettuce, shredded

2 tomato, sliced

1 Lebanese cucumber, sliced

1 small tin corn kernels, drained and rinsed

1 cup grated reduced fat cheese


Method

Spread each wrap with avocado

Top with tuna, salad ingredients and cheese, dividing evenly between each wrap

Wrap up tightly and slice in half diagonally

 

Tip

You can substitute the tuna for any protein of choice such as hardboiled eggs or lean chicken breast.
